This fermentation takes place in 100-year-old cedar barrels. The taste of tamari is wonderfully complex and powerful, and contains all five flavours: salt, sour, sweet, bitter and umami. With this type of Japanese soy sauce, you can raise any dish to a higher level miso soups, noodles, marinades sushi, ... even stews!
